[size=85%]Ingredients:
[size=85%]1kg flour
[size=85%]1 egg
[size=85%]1 1/2 tsp salt
[size=85%]2 tbsp. sugar
[size=85%]1 packet Instant yeast
[size=85%]2 tbsp butter/margerine
[size=85%]900 ml warm water
for onion fritter:
2-3 onion- finely diced
2 green chilles- seeded n diced
corriander leaves - chopped [optional]
for coconut fritter:
6 tbsp grated coconut [white portion only]
4 tbsp rice flour
1 tbsp sugar
for tumeric fritter:
1-2 tsp tumeric powder

- [size=85%]Stir all ingredients thoroughly till well mixed and leave to stand for one hour till doubled.
- divide the dough into 3 portions. Add in either the tumeric/coconut/onion fritter's ingredients to each of the portion.
- fry till done

[size=85%]500g Sweet potatoes + 500g potatoes - skinned, boiled and blend till smooth with the stock
[size=85%]2 tbsp Chili powder
[size=85%]4 tbsp chilli paste [add more if you like it hotter]
[size=85%]10 shallot - finely chopped
[size=85%]1 block of Gula melaka + granulated sugar to taste
[size=85%]Tamarind, soaked to extract juice to taste
[size=85%]vinegar to taste
[size=85%]2 tbsp dark soy sauce
[size=85%]3-5 tbsp dried shrimp [udang kepai would do]- pounded - optional
[size=85%]1 cube chicken stock- optional
[size=85%]150g peanut - roasted n pounded
[size=85%]sesame seed - dry roasted
[size=85%]enough tapioca flour to thicken the sauce
[size=85%]enough water to cook the gravy
[size=85%]Method:
- heat oiln fry the chilli and shallot till aromatic then add in the rest oftheingredients except for seasonings, sesame seed and tapioca flour
- [size=85%]season it to taste..and simmer it till slightly thickened. the longer it is simmered the better the taste will be.
- [size=85%]mixed the tapioca flour with water the add to the gravy to thicken and make it kinda gluey
- [size=85%]add sesame seed

[size=85%]potatoes - skinned n seasoned with tumeric n salt the deep fried n sliced
[size=85%]tofu - fried n sliced
[size=85%]fish cake - fried and sliced
[size=85%]the 3 fritters - sliced
[size=85%]sweet turnip - shredded
[size=85%]cucumber - shredded
[size=85%]egg - boiled n halved
[size=85%]green chillies - sliced
[size=85%]extra roasted sesame seed for sprinkling
[size=85%]noodles - blanced
and your may add any ingredients to your liking...
