KUAH KANDAR

Assalammualaikum semua,

Ishi nak tahu sangat macamana nak buat kuah nasi kandar...leh tak sesapa tolong Ishi... dengar kabar rempah ratus yang digunakan adalah berbeza...jika ya...jenama jenis apa ya... harap ada yang sudi membantu

Spicy Aloo Paratha (Potato Stuffed Paratha)

For making 10-12 parathas you require:

2 cups fine whole wheat flour( atta )- maisya guna tepung biasa, sebab tu warna putih jer
3/4 - 1 cup warm water or milk
2-3 tbsp oil or ghee
1 tsp salt
1/2 tsp sugar
Some extra flour for dusting rotis when rolling

How to make dough:

Use food processor if you have one.
Warm water or milk in a microwave.
In a mixing bowl add flour, salt, sugar, oil or ghee and mix together.
Slowly add warm water or milk and knead it into a soft dough.
Knead the dough with for 10 minutes and cover it with a damp cloth.
Let it rest for atleast 20 min.
Divide dough into 12 equal portions and coat them with flour.

For potato filling you need:

2 large potatoes
1 small onion
1/4 cup peas
2 tsp red chilli powder
1 tsp cumin seeds

1/2 tsp amchur ( dried mango) powder
1 tsp garam masala
1/4 cup chopped coriander leaves
salt to taste

How to make potato filling:

Cook the potatoes in microwave for 5 minutes with little water covered
Peel off the skin chop them and keep it aside
Chop onions very fine

In a kadai or pan add jeera and fry it till golden brown. Add onions and saute well
Once the onions are browned add peas and cook for a minute
Add the powders, red chilli powder, garam masala, amchur powder and blend well
Add the chopped potato and mash it to become a paste
Add coriander leaves and adjust salt and spices to taste
Let this filling come to room temperature

How to make aloo parathas:

Now roll out the dough into small palm sized rotis

Fill it with potato filling and wrap it as shown in the pic
Now roll out the potato filled dough ball just like a regular chapathi.

Heat tawa or griddle and cook these parathas with little ghee or oil


Spicy Onion Chutney

Ingredients:

2 big yellow onions or red onions
6 red dried chilles
2 garlic pods
10 curry leaves
1/2 lemon sized tamarind soaked in warm water
1/2 tsp sugar
salt to taste


Procedure:

Chop the onion
Peel off the skin of garlic pods and chop them too
Heat oil in kadai or pan, and add onions, red chillies, curry leaves and garlic pods
Fry them until onion are golden brown

Switch off the heat let the mixture come to room temperature
Grind into fine paste adding soaked tamarind, sugar and salt

Adjust salt to taste.

saya try search..tak jumpa resepi kari mamak
nak mintak tolong..sesapa yang tau buat kari ikan mamak kaw2 mcm restoran pelita ke..nasi kandar line clear ke...subaidah ke...heheh

mamak dia tak main santan2 ni...tairu jugak main... ataupun susu masam...
maklang suka buat kari mamak yg niceghost tempek satu tika dulu....powerrrr....

dh try search, tk jumpa pon..
kt index pun dh cari, tp tak ade..
dah seharian mencari, tp tak jumpa2 jugak..

tenkiu...saya dah dapat resepi kari mamak..

maklang...resepi niceghost tu saya dah jumpa kat fp maklang TQ
popinjay....utk resepi hati saya takde..tapi kalau daging ada..awak tukar la dgn hati lembu...

DAGING MASAK KANDAR
Bahan:
1/2 kilo daging di potong besar sikit
2 biji ubi kentang
2 biji bawang besar - dikisar
2 ulas bawang putih-dikisar
2-3 sudu rempah kari ikan
Sedikit cili kisar
Sedikit daun kari
2-3 asam keping
sedikit kicap pekat
sedikit air


Cara:
satukan bawang besar, bawang putih, cili kisar dan
rempah kari ikan. kacau hingga sebati. Tumiskan
bahan yg telah disatukan tadi bersama daun kari
sehingga rempah garing dan naik bau.  Masukkan
daging dan sedikit air dan sedikit kicap untuk
menghitamkan sikit kuah tu juga asam keping.
Biar sehingga daging 1/2 empuk dan msaukkan
ubi kentang.  Masak sehingga ubi dan daging empuk

kari mamak neh biasa haku buat ikut resipi belakang pek serbuk kari tuh../
haku tak hengat ikut resipi serbuk kari mana.. alagapas or baba..
tapi yg haku ikut tu ada masuk santan

hokay jerk rasa dan simple jer pembuatan nye...

haku pernah baca somewhere nak buat kari mamak neh yg paling penting kena guna  bawang banyak2 utk menumis tuh..

oic.. padanlah kari dorang ni ade rasa msm2 skit. Cmpr tairu rupanye.. Anyway, kari mamak ni mmg sedap.. pekat.. Kalo makan roti canai mesti nk lawan ngan kari ikan i/o kuah dal..

yup..yang masak kari ikan nya..
untuk daging ni bukan kari..ni mcm masak kandar...kuah itam tapi skit aje kuah..

teringat kat satu iklan rempah..alagapas ke babas..
tapi iklan tu tunjuk step by step cara2 nak masak kari mamak style...
tapi willy lupa ...iklan tu pun dah takde..few years back..

kari mamak ni sedap pasai depa boh serbuk kas-kas.
mak mertu aku kata itu yg buat kari tu lagi sedap n pekat.
kalau bubuh serbuk kas2 mmng rasa kari tu lain.sedap......
