spnjg pengalaman sy, kalau proses menguli berjalan lancar, roti xde masalah.
n jgn lupa, yeast mesti lah boleh 'bekerja'.

n tepung yg biase digunakan utk me-roti2 ni, tepung high protein.
kehalusan dia xde tandingan!

just my 2 cents

roti ringan dan gebu bergantung pada cara kita uli...

klau uli guna tangan kena uli sampai elastik dan licin.....dlm 1/2 jam ikut kepantasan tangan lah....

klau guna breadmaker atau kenwood tu....hmmm.....campak ja semua tu biaq depa uli.....habis crita...heehe

betul kata pinky uli dgn tangan kena lama skit..sampai di elastik dan licin..saya tak brp reti nak describe elastik tu cam ner..tapi bila awak cuba tarik adunan tu susah nak pecah/patah licin tu samapi adunan tak melekat2 kat bowl mixer..

cara adunan lak free style... so far saya buat turned out ok cuma kalau yeast tak ok barulah tak menjadi..

White loaf...resepi jumpa kat fp soulha, tapi resepi asal dari k.noor...tu dia...pusing-pusing resepi, balik semula kat FNR ni Seperti biasa maisya uli guna tangan je...cara sama macam buat roti yg lain tu



ROTI PUTIH source Noormasri.

Bahan-bahan:

1 cawan air suam (luke warm)
1 sudu kecil garam
1.5 sudu besar gula
1.5 sudu besar minyak boleh ganti mentega atau shortening yg dicairkan
3 cawan tepung roti
1.5 sudu kecil yis kering

Anis memang tabik kat maisya...walau uli roti secara manual, tapi roti menjadi dan gebu macam diuli dengan mesin jer..Satu lagi kan, anis memang tabik kat kome semua yang rajin sungguh ambil gambar setiap masakan yang dihasilkan..anis ni udah ler malas menguli secara manual, nak ambil gambar pun malas..selalunya pun lum sempat apa2, dah kena ngappp...sejak anis ada BM ni, roti memang menjadi ajer, syok betul..

SIL nunul penah ajar nunul wat garlic bread...tp yg cokia je la...
simple bg yg tak reti mcm nunul....just garlic+oregano+mentega+perasa ckit... ditumbuk, n sapu atas roti dan tros bakar

so, anyone yg ade resepi camni tak?

tepung tu x sama sbb kandungan protein dia berlainan & penggunaan dia pun berlainan jugak. Biasa kat pek tepung ada ditulis kandungan proteinnya.

Utk superfine flour, kandungan proteinnya rendah (5-8%) & sesuai utk buat kek.Tepung ni kita panggil 'soft wheat'.
Tepung berprotin tinggi tu kandungan protein tinggi (11-13%) kena ngan namanya . Kandungan glutennya pun tinggi & sesuai utk buat roti. Tepung jenis ni dipanggil 'hard wheat'.

Yg kero buat ni guna basic pizza dough recipe & letak kentang & tomato & daun sup je. Rosemarynya x de.
