ini resepi Aunty Yochana
For the Topping:
60 gm. Caster sugar
90 gm. plain flour (i reduced a bit tambah 50 gm grounded almond)
60 gm. Butter
a pinch of salt
For the muffins:
120 gm. Butter - melted
120 gm. Light brown sugar
2 eggs - beaten
1 tsp. grated lemon zest
150 gm. sour cream
250 gm. cake flour
2 teaspoon baking powder
1/2 teaspoon bicarbonate of Soda
1 teaspoon ground cinnamon (i omit this)
a pinch of salt
200 gm. fresh blueberries (guna blueberry filling)
Method:
(1) For topping: sift the flour into a bowl with salt then cut in butter into small pieces and toss in the flour. Add in butter and rub with fingertips until the mixture resembles breadcrumbs. Chill.
(2) For the muffins: Sift the flour with the baking powder , bicarbonate of soda , cinnamon powder and salt.
(3) In a separate bowl, combine the butter, eggs, lemon zest and sour cream.
(4) Stir the wet ingredients into the dry ingredients, taking care not to overstir. Fold in blueberries and stir lightly.
(5) Spoon batter into 12 muffin cups and sprinkle topping on top.
(6) Bake at 190C for about 20 to 25 minutes or until well-risin and golden-brown. A skewer inserted into the centre will come out clean.
(7) Remove the muffins from the tin and cool on a wire rack.
saya tak pakai blueberries so just dollop the filling atas batter tu jer and sprinkle the crumble! something new sebab ada crumbles tu..saya dpt lebih kurang 24 biji guna papercup size 8. |

maisya tak guna applesauce, guna minyak je so tak tau lah macamana rasanya kalau guna applesauce tu....err applesauce tu apa sebenarnya ek? |

Pisang, Kurma & Kacang
Saya cuba resipi ni baru-baru ni. Ambil dari buku "Godaan Kek-kek Comel oleh Betty Saw".
Bahan-bahan
120g tepung bersebuk penaik
1/2 sudu teh soda bikarbonat
125g mentega
120g gula kastor
2 biji telu (65g setiap satu)
Pisang yang ranum (1 biji, yang besar, kira-kira 120g tanpa kulit)
50g kelapa tanpa kulit ([size=85%] apa ni ye? I substitute with cornflakes ) - dah check dgn english version = kelapa parut
1 sudu besar susu
4 biji kurma tanpa biji ( setiap satu dihiris 4 dan dileperkan)
15g hirisan badam
Mangkuk kertas sederhana (15 keping, 4cm dasar x 2 cm ketinggian)
Cara
1. Ayak tepung dan soda bikarbonat.
2. Pukul gula dan mentega sehingga kembang dan ringan, masukkan telur, sebiji setiap kali dan pukul hingga sebati.
3. Masukkan pisang yang dilecek dan kacau. Kaup balikkan tepung bersebuk penaik dan kelapa, kemudian masukkan susu dan kacau.
4.Isi dan ratakan adunan dalam mangkuk kertas hingga 3 suku penuh. Bubuhsekeping kurma yang dileperkan dipermukaannya, dan taburkan denganhirisan badam.
5. Bakar dalam ketuhar yang dipanaskan pada 175 darjah celcius, selama 15 minit atau hingga masak sepenuhnya.
6. Sejukkan kek di adalam acuan selama0 10 minit sebelum dikeluarkan ke atas rak dawai untuk disejukkan.
Penggemar pisang boleh laa cuba, sedap, cukup rasa pisang dan kurma. Tapi jgn ganti kelapa dgn cornflakes macam i buat tu ( ni kes itu je barang ready stock kat dapur). Ada rasa liat bila gigit cornflake tu.. |
