BINGKA SUJI (BAKED SEMOLINA CAKE)
Recipe by Norzailina Nordin
Cuisine: Malay
Type of Dish: Bread, cakes and cookies
Cooking Method: Bake
Serves: 6


Ingredients

5 eggs
180g castor (superfine sugar)
250g semolina
400ml coconut (from 400g grated coconut and sufficient water)
Pandan juice (100ml, from six screwpine or pandan leaves blended with water and strained)
1/2 tsp salt
600ml water
140g margarine
50g plain (all purpose flour)
1 tsp vanilla essence (optional)

Method
Line the bottom of a 25cm round baking tin (pan) with aluminium foil. Grease with a little margarine.
Beat eggs and sugar in a mixing bowl until combined. Pour into a pan.
Add semolina, coconut milk, pandan juice, salt and water. Mix thoroughly and stir mixture over medium heat until it becomes thick.
Remove pan from heat and mix in margarine, flour and vanilla. Stir to a smooth consistency. Slowly pour mixture into prepared tin.
Baked for 1 hour in a preheated oven at 200癈 or until cooked through and firm to the touch. If you prefer a crustier top, put under the grill for 2 to 3 minutes. Cool cake thoroughly before cutting to serve.

Note
You can replace margarine with butter if you like or use a combination of both.

dah try buat suji square kakmas nih.....maklang bakar dengan suhu 170 C. :ting:
rasa suji ni sedaplah kakmas..maklang letak rasberri jam :love: .kalo tau dulu lagi dah buat tp tu ler asyik postpone memanjang jer....macih byk kakmas for ur recipe ni...:love:

kawan2,,semalam bal buat bingka ni...em,,masa campur kan margerin tu ,,margerin tu terapung2 susah nak sebati ,betulkan yang margerin tu last sekali campur dgn adunan ,bal memang lemah sikit translet bi ke melayu,,
sudahnya yang bingka tu mcm terbahagi kepada 2 bawah keras atas lembik,,macam srimuka,,yg atas sedap makan...sebab ada garing2..
bal rasa sebab suhu terlampau panas 200 darjah,,coz oven bal kalu org kata 170 darjah,,kena letak 150 darjah:kant:

..alamak malunya...bal tak de pun panaskan...,,ada sesiapa tak boleh taipkan dalam bahasa melayu,,semalam bal da rujuk dictionary pun feel..

Marjerin tak perlu dipanaskan.  Translation bawah.....

Cara
Alas dasar acuan bulat 25cm dengan foil.  
Minyakkan sedikit dengan marjerin.
Pukul telur dan gula dalam mangkuk hingga sebati. Tuang ke dalam periuk.
Masukkan suji, santan, jus pandan, garam dan air.  Gaul sehingga pekat di atas api sederhana.
Alih periuk dari api dan gaul marjerin, tepung dan vanilla.  Gaul hingga tergaul rata.
Tuang perlahan-lahan ke dalam acuan.  
Bakar selama 1 jam, 200癈 di dalam oven yang telah dipanaskan terlebih dahulu atau sehingga masak.

Ni Maisya translate utk balquen


Sooji Ki Barfi ( http://www.angelfire.com/country/fauziaspakistan/soojikibarfi.html )
2 cawan suji
1 tin susu pekat manis
1 1/2 cawan minyak sapi/minyak masak
4 cawan air
15-20 biji badam (dihiris)
2 sudu besar kismis
3-5 helai safran(direndam dlm 1 sudu besar air)
3-5 biji badam (dihiris) - utk ditabur diatas kuih

-Panaskan minyak sapi di dalam periuk. Goreng badam dan kismis sehingga agak keperangan. Angkat dan ketepikan.
-Goreng pula suji menggunakan minyak yg sama sehingga warna agak keemasan. Tambahkan safran( bersama air rendamannya ) dan 4 cawan air. Kacau selalu. Kecilkan api dan terus kacau hingga semua air kering.
-Tambahkan susu pekat dan kacau lagi hingga keluar minyak. Masukkan badam dan juga kismis, gaul rata dan tutup api.
-Tuangkan adunan ke dalam loyang (yg telah disapu butter). Potong-potong kecil kepada bentuk segiempat atau diamond. Boleh hias setiap potongan dgn hirisan badam.

#Safron digunakan utk mendapatkan warna kuning jadi Maisya gantikan dgn pewarna kuning sahaja.
