I make it sometimes, and tastes great. Instead of using yolks use about half cup of milk. I heat 1/4 of the milk a little bit and then add the lemon juice, after that mix the rest of the milk and start doing the oil emulsion. Basically the same process as with the egg yolks.

Soy Milk Mayonnaise

Ingredients:
3/4 cup soy milk
1 1/2 tbsp lemon juice or vinegar
3/4 tsp salt
dash of pepper
3/4 cup oil
1. In a blender or food processor, blend together (on high) the milk, lemon juice, salt, and pepper for about 1 minute. Add the oil gradually while the blender is running until mayonnaise becomes thick
2. Store in the refrigerator in a clean, dry container with a tight-fitting lid. Will keep for 7-10 days.
Makes approx. 12 servings (2 Tbsp per serving)

Kuah Yong Taufu (hitam)
Sumber: Alaf
560ml air rebusan ayam/daging
1 camt garam
3/4 camb gula
3/4 camb kicap pekat
3/4 camt serbuk rempah lima + 1 camb air
3 camb sos kacang hitam
2 camb sos tiram
serbuk lada hitam secukupnya
1 camb tepung jagung + 3 camb air
1/2 camt minyak
Cara membuat:
1. Jerang semua bahan kecuali bancuhan tepung jagung dan minyak.
2. Bila mendidih, perlahankan api dan renihkan 2-3 minit.
3. Kemudian masukkan bancuhan tepung jagung dan kacau hingga pekat. Tambah minyak untuk mengilatkan kuah.

kenapa dia tak pekat?maybe hitamputih kurang beat kot?diba tak penah try buat sbb kurang suka makan mayonis ni, tapi masa demo tu, cikgu yg ajar diba buat pakai pemukul bahulu biasa tu jer.. lepas pukul telur, dia masukkan cuka n minyak gilir2 pastu pukul lg sampai mesra/kembang. Tu je.. Elok pulak dia punya kepekatan.tang kaler tu, yg jual hok komersil tu mmg kaler dia more to putih sbb diorang campur putih+kuning sekali.Kalo original recipe, mmg pakai kuning telo je.. |

yg ni simple banget.. Slalu diba main campak2 je kalo tiba musim mangga mcm sekarang (nak2 makan ngan mangga epal)
Kicap (slalu pakai cap k*p*s *d***)
Cili padi dlm 5-6biji (ikut suka)
Gula 1sudu beso
Belacan
Tumbuk2 cili padi, kalo nk potong halus2 pun boleh gak - lagi best time tergigit cili tu..
Pastu masukkan bahan2 lain...Dah siapp.. tak sampai 5 minit dah boleh mengadap mangga tu ngan kuah colek ni. Makanla sampai tak ingat donia.. :lol :lol

mmmm smbal belacan lak, for those yg malas nak makan pedas2, leh buat gini. buang biji dulu and utamanya buang bahagian tengah yg memegang biji cili tu, sbb bahagian tu yg pedas nyer, agak2 laa. kalau buat tiga biji, stay kan satu biji cili tu ada full set. and tumbuk lumat2. pedas tetap pedas tapi idak la sampai mengganggu rasa lain. |

Resepi yg ada kat page 1 tu....taste dia dah sedap, macam real mayonis tapi agak cair sikit...masa bubuh dlm petiais dia pekat le tapi bila letak kat luar , cepat jer dia cair. Maybe my method tak berapa betul sebab the recipe suruh blend high speed for 1 minute, maisya tak berani lak nak on blender tu continously sampai 1 minit....blend kejap stop then sambung and stop...tu yg tak berapa menjadik tu kot....nanti dah habis stok yg ni akan try lagik utk dapatkan yg perfect. |
