egg noodle yg dah digoreng garing....makan macam ni saja pun sedap ..rasa macam makan mamee !


Crispy Fried Egg Noodle yg dah dicurah kuah atasnya.

dulu2 masa kecik2 tu ada makcik ni selalu jual mee siput goreng camni pastu atasnya boh sambal tumis pedas manis... sedap! harga 10sen. krup krap krup krap makan. la ni takde lagi nampak orang jual camtu.

pokok kesum tu mau biaq lama sket mau kuar akar tuuu...hehehehe

resepi camapak2 jek soulha, blend bwg, garlic, serai, lengkuas n cili kering, pastu tumis sampai naik bau then masukkan rempah kari....buh stok n isi ayam, udang, kerang n fishball..masak sampai pekat then buh santan sket..buh daun kesum
last sekali buh tauhu pok..
buat la sambal udang kering sket

eh nanti lah kita kasik resepi yg proper..

Last week I ada buat Hokkien Mee.
Tapi tak sempat nak snap gambar la my hubby dah lapar sangat.
Insya Allah next time kalau i buat,I will post gambar kat sini lagi ok.

sambal tu nampak je banyak, mallanhead
cilinyer tak pedas pun..

kita tak penah lagi bagi resepi kat sini rasanya..

roughly camni laa..



Penang Curry Mee/ Laksa Nyonya

utk stok:
1/2 kg Udang - asingkan isinya utk kuah n simpan kulitnya utk stok
2-3 rangka ayam
3-4 ekor ketam [tak perlu saiz besar sebab kita cuma nakkan  stoknya]
2-3 hiris halia

renih semua bahan utk mendapatkan stok [isi udang jgn masuk sekali tau].. then tapiskan utk amik stoknyre sahaja

bahan kisar:
4 bawang besar
5 bawang putih
8 serai
1" lengkuas
3-4 tbsp cili giling [ikut pedas mana yg kita suka]

2-3 peket rempah kari daging [kalau bleh dapat yg giling tu cantik sgt lah atau pun campurkan sedikit dgn rempah kari ketam/udang] - dibancuh dgn air
1/2 kg kerang - celur kejap then kopek isinya
fish ball n Fish cake secukupnya
2 cawan santan pekat
daun kesum
tauhu pok secukupnya

tumis bahan kisar hingga naik bau n sedikit garing then masukkan rempah kari..tumis dgn api perlahan  hingga hilang bau rempah
them masukkan stok serta daun kesum..renih hingga mesra n pekat then masukkan kerang, udang, fishball, fishcake dan santan..perisakan garam n gula  secukup rasa
bila dan nak tutup api baru masukkan tauhu pok

mee kuning - celur
kacang panjang - dipotong pendek n dicelur seketika
sawi - potong pendek n celur seketika
telur rebus
daun bawang - dihiris halus
bawang goreng
limau kesturi

utk sambal udang kering:
bawang putih - chopped [taruk byk2 baru sedap]
cili giling
udang kering yg telah tumbuk [kita kadang2 selamba jek guna udang kepai/geragau tapi kene rendam dulu laaa]
minyak masak+sedikit minyak bijan utk menumis
garam n gula to taste

tumis chopped garlic, then masukkan cili giling n udang kering yg telah ditumbuk..renih hingga cukup masak then perisan garam n sedikit aje gula secukup rasa

masukkan mee kedalam mangkuk n taburkan dgn bahan tabur then tuangkan kuah bersama sedikit sambal
siappp!!!

mcm renyah kan?
tapi kalau nak shortcut..stok tu guna stok ayam n udang kering yg telah diblend
kalau takde kerang pun tak pe
bahan tabur tu pun bleh adjust2..tak perlu mcm2 sgt
fishball bior byk sket baru sedap

Thanks ninoz. Nanti kalau jemput kekawan boleh buat yg ni lak. Kat Aussie ni laksa nyonya, org panggil laksa lemak. Siap apa perencah segara utk mat2 salleh ni buat. Untuk tekak sorang makan boleh lah. Tapi bila nak jemput org dtg, sedaplah buat from scratch kan.

Dah lama tak makan hokkien mee. Mee yg masak cara hokkien ni yg gelap tu kan. I kalau order mesti tanya samada gelap atau tak gelap. Yg tak gelap tu cantonese kan. I selalu mix up.

Last week lak I buat mee kari. Jemput my neigbhour makan.
