I memang siang ikan pun pakai glove. Tak suka bau hanyir. Sesusah je I suruh hb siangkan.

CRAB CAKE
mayonnaise
egg -letak sebijik yg kecik
black pepper
dry mustard - x ada, gantikan dgn mustard biasa jek
salt
worcestershire sauce
crab meat
chopped fresh parsley
bawang besar - diced
celery -diced
bread crumb
sauted bawang besar ngan celery dgn sedikit olive oil sampai bawang tu transparent, tutup api masukkan semua ingredient kecuali bread crumb masukkan sedikit saja....gaulkan. bulat2 kan doh sederhana besar sejuk kan dlm fridge (bukan freezer ya!) selama 1 1/2 jam. keluarkan then celup dlm baki bread crumb tu goreng dlm minyak yg sedikit (bukan deep fry!) |

Long saya pernah makan trader joe punya crab cake -- tak sedap langsung! will try yours very very soon. Tapi crab meat tu hok tipu boleh tak?

Chilli Crab
Ingredients:
1 lb (450g) mud crabs or soft shelled crabs
4 tbsp plain flour if using soft shelled crabs
3 tbsp vegetable oil*
8 cloves garlic, roughly chopped
8 fresh red chillies, roughly chopped
1 egg
2 spring onions, cut into finger length
1 tsp freshly squeezed lime or lemon juice
1 small bunch coriander leaves
*For soft-shelled crabs, oil for deep frying
Mix together for Sauce:
1 cup of water, 5 tbsp tomato sauce, 1 1/2 to3 tbsp sugar, or according to taste, 1 1/2 tspcornflour, 1 tsp pounded brown preservedsoya beans (tauchu), 1/4 tspsalt
Method:
Heat the oil in a wok or shallow saucepan overhigh heat. Add garlic and stir-fry for 1 minute.Add the chillies, stir-fry till fragrant. For mudcrabs, add at this stage. Fry well till shells startturning red, add sauce ingredients stir well, coverwith lid and simmer till shells are red. Break eggsinto the wok and streak with a fork, simmer tillcooked. Squeeze lime juice over and stir inscallions. For soft-shelled crabs, cut each crabinto 4, dry well, dredge in flour and deep fry tillgolden brown and crispy. Make the sauce asabove, but omit the mud crabs. Toss soft shelledcrabs in sauce just before serving. |

Pepper Crab
Ingredients:
2 lbs large mud crabs or prawns, claws cracked, shells removed and cleaned. Drain to dry. Or 1 lb soft shelled crabs
1 cup flour if using soft shelled crabs
4 tbsp freshly ground black pepper
3 to 4 fresh red chillies, seeded and finely chopped
4 tbsp butter
10 cloves garlic, peeled and chopped
10 slices young ginger
1 to 2 tbsp oyster sauce
2 tsp dark soya sauce
2 tsp sugar (optional)
Coriander leaves to garnish
Oil for deep frying.
Method:
Dry-fry black pepper in a wok or frying pan tillfragrant. Remove and keep aside. The crabs tastebest if they are deep fried in very hot oil first. deepfry on all sides till the crabs turn red. Drain and keepthe oil aside. For soft shelled crabs, pat the crabsdry, cut each crab into 4, coat with flour and deepfry till golden browned and crispy. Heat a wok, addthe butter and when it melts and is hot, add thegarlic, ginger and chillies and stir fry for 3 minutestill the mixture is fragrant. Add the oyster sauce,soya sauce and sugar and stir well before addingthe pepper. Stir fry a few seconds on high heat, addthe crabs and stir fry 1 minute. Serve with the garnish. |

sorry dar..tak perasan soklan dar ni..long pakai crabmeat yang dlm tin tu..bukan imitation crabmeat (yg panjang dan atas tu warna merah), kalau yg imitation crabmeat x pernah cuba..so tak tau la menjadi ke tidak! |
