Bahan2 Penambah Dalam Bakeri

Geng,

Aku nih rajin gak gi bake with Yen ngan kedai2 peralatan bakeri tu...banyak la aku jumpa dan refer kat forum recipe yg best nih macam tepung hong kong ka, tpg kek ka bla2...dan aku pun da tau guna emplex dan ammonia utk rangupkan biskut..dpd situ leh tak sesapa yang tau apa guna bahan2 penambah ni selain apa yg aku tulis kat atas tu....lagi chantek kalu ada sukatan sekali utuk guna...macam 500 gm tpg nak wat biskut rangup guna 1 sd teh empex...dan lagi bagus kalo ada yang tau function bahan lain macam :

jenis2 tepung (mgkn thread tpg dah ada),
susu tepung special case tuh,
bread softener, bread improver (sukatan dia tuh)
gelatine,
liquid glucose, molasses, golden syrup, treacle
segala jenis emulsifier cam ovalette, jilk, quick 75 (warna putih ada, coklat ada)
alum powder, ammonia, krim of tartar, etc and liquid form macam glycerine tu suma...
essence (ada yg local ada yg imported dan ada yg powder esp vanilla)

aku try tanya staff kat sana dorang bukan tau pun...bungkus tpg dorang tau la...brg2 yg jual kat kedai2 camni suma menggiurkan aku...rasa nak try je suma tuh...tp banyak aku tak tau guna...sharing is caring maa...tq

Alum powder tu camana nak guna kak noor, sukatan dia tuh...apa function dia kak noor...ingatkan cakui wat pakai yis macam donat tu..

sket aje guna nya..akak buat tak buh pon..cam takut je nak makan chemical nih..:bgrin:

klu tengok resepi Cakoi Amy Beh..mmg ada 2 bahan ni..nanti akak cek byk mana

fungsi nya...agaknya kasi lembut kot..

kalau terlebih bau dan rasanya tak sedap....

glucose salah satu bahan untuk marshmallows dan jelly (gula-gula)

jaja ada pegi Bagus ari tu, ada FInamul 87, Jaja tanya kat cina cashier tu,
dia kata utk biskut? Ada sesapa pernah cuba? Apa fungsi Finamul tu?

Lagi satu, utk dptkan biskut yg rangup, pakai tepung ros. betul ke?
pakai tepung ros semua atau campur dgn tpg gandum?
