meditteranean style
if u all wanna try something different, can give this a try. it's more to meditteranean/spanish kinda marinade before grilling.
a cup of plain yoghurt(or u can vary it by using mango-flavored)
1tbsp ground dried ginger(can also use ground fresh ginger)
1tbsp ground cumin
1tbsp ground garlic
1tbsp paprika (can use chili powder but half the amt)
chopped parsley or rosemary(optional and can be substitute with dried herbs)
juice from 1 lemon
2 tbsp of olive oil
salt and pepper to taste
mix all ingredients and marinate meat for at least 1hr, overnite lagi sedap.
this marinade is suitable for all types of meat.
kalau guna lamb, gantikan herb tu dgn fresh daun pudina yg dihiris halus dan gunakan mango-flavored yoghurt. if u only have plain yoghurt, mix in 1tbsp of orange/strawberry/apricot jam. and go easy on the ginger. believe me, this'll change ur mind abt eating lamb. :bgrin: |

happy to share cranko it's my hubby's recipe, actually :bgrin:
oh yeah...another note...this marinade works better on whole chicken, chicken breast or deboned chicken thigh...not so much on chicken wings cost of their lesser surface area to retain the marinade. |

Assalamualaikum semuer,
Teman selalu gak buat BBQ kat ghumah/kampung.
Selalu nya sebelum n selepas raya.
Buat kat padang........so ada ler around 50 orang datang.
Spt Kak NoorMasri, ada pelbagai cara n bahan yg bolih di panggang.
Yang teman perati di sini, forumis kebanyakkan nya pakai microwave dahulu.
Kemudian baru di masukkan ke dalam oven.
Ini agar bahagian dalaman dan tulang akan terlebih dahulu MASAK.
So, biler di masukkan di dlm oven, hanya bahagian luaran sahaja yg perlu di masakkan sahaja.
TETAPI bagi forumis yg TIADA microwave, bolih laa guna CARA KUKUS.
Ayam yg telah di potong tersebut di kukus terlebih dahulu.
Kemudian baru lah marinate di antara 30min-4 jam.
Ada pelbagai CARA untuk 'mewangikan' makanan tersebut.
Di antara nya ialah:
1. daun kari
2. thymes
3. balsam
4. daun limau purut
5. serai
6. jintan manis
7. jintan putih
8. lada hitam
9. lemon juice
10.garam masala
11.5-spices l
Setiap bahan di atas akan mengeluarkan AROMA nya yg tersendiri.
Then bahagian kuah or bahan memekat n pewarna.
1. yoghurt
2. susu masam or tairu (bley guna Ideal milk + air limau)
3. santan
4. papriyka(merah)
Bahan minyak nya:
1. butter/margarin
2. olive oil/minyak masak
Tenderizer nya:
1. Bawang putih
2. Bawang merah
3. Halia
4. yoghurt
Jadi seseorg tukang masak yg creatif, dier bolih adunkan bahan bahan di atas mengikut kehendak nya.
Sesiapa yg ada lain lain herba, bolih ler tambah. (raser nya ada lagi)

bahan perap BBQ ayam mak akak tu sesuai gak tuk Seafood especially udang, sotong, crayfish, ikan dan etc.. tapi for ikan, just add sedikit chillie flakes to give that extra kick....
6 biji bawang putih - mesin halus
5 sdm oyster sos
2 sdm serbuk lada (nak pedas tambah lagi)
2 sdm gula
sedikit garam |

Assalamualaikum semuer,
Teman pernah panggang ikan kerapu/siakap Lebanese style.
Actually maser tu baru jer balik lunch dari Lebanese Restaurant di Sg Wang. (Restaurant Tarbush)
Sos nya tak sempat plak nak teliti, sedap gak.
Ada 4-5 macam sos nya.
Ikan kerapu tersebut di BELAH secara SUNNAH Nabi saw.
Yakni di belah dari bahagian kepala hingga ke ekor dari bahagian atas nya.
Di hiris sampai ler ke bahagian perut dan di buka 2 tanpa putus.
Kemudian di basuh bersih dgn air asam jawa.
PASTE nya:
1. bawang putih/merah/halia di blend.
2. kari ikan
3. santan
4. garam
5. daun kari
Bahan2 ini di masak terlebih dahulu dgn minyak di dlm kuali.
Selepas masak....di angkat dan di lumur pada isi ikan td.
Next, panggang sehingga masak.

p/s lagi bagus guna Ikan Kerapu, ranggup walaupun sejuk |

bbq seafood eh..
ni antara resepi marinate yg sempoi
[kuantiti bahan kene agak2 la eh..agak2 ape yg kita suka tu bleh la taruk lebih sket]
Bahan Perap utk BBQ Seafood
4 bwg besar
sedikit halia
2 btg serai [kalau x suka serai takyah taruk pun x pe]
3-4 cili merah
santan pekat secukupnya
garam n gula secukup rasa
daun kunyit
sedikit kunyit hidup
lada hitam - jika suka
sedikit cuka
kisarkan semua bahan hingga halus [bahan kisar shud be kekuningan..jgn too generous dgn cili]
perapkan bhn mentah yg hendak dibbq terlebih dahulu [agak2 la dlm 20-30 minit..kalau lama sgt nanti berair] tp kalau takde masa tak marinate pun tak pe
pastu bakar/grill seperti biasa
