Tumpang tanya...

Boleh tak sesapa bagitau cuka balsamic ni diperbuat daripada apa? banyak resepi mat salleh guna ni, tapi saya tak sure boleh ke kita guna. Halal ke benda ni?

tak de pulak disebut mengandungi alkohol...

ada baca info di botol tu ada dari red wine vinegar (yang komersial) bukan true balsamic vinegar.....
ni kira boleh guna ke sebab sudah jadi cuka?

kalau ikutkan secara saintifik..once dah jd cuka..alkohol dah takde..

tapi akak bila beli ready made salad..bila ada dressing white wine vinegar..akak tak jd beli..

check ingredients, mostly ada alcohol tapi ada jugak yg takde, brand dah tak ingat...

Tengok kat kedai, mostly ada red wine. Kalau sesapa ada jumpa yang takde alkohol sila bagitau brand and mana boleh beli ok. Terima kasih banyak2.

Saya ni baru nak minat belajar masak. Banyak resepi dah print dari forum ni... yang dah buat so far semua menjadi. Thanks so much!

Vinegar/cuka

Aku tengok kat masakan barat terutamanay untuk resepi BBQ banyak menggunakan vinegar/cuka contohnya macam balsamic,cider dan white vinegar.Nak tanya vinegar yang disebutkan tu halal ke?

Setau aku, cuka nie bukan jenis yg memabukkan... jadi dari apa jenis pun halal, walaupun apple cider. Asalkan trace alkohol dia dah hilang, rasanya takda masalah.

Vinegars are acids. White vinegar contohnya is just acetic acid (and water) .

Apple cider (apple juice) kalau kat US tu memang non-alcoholic. Kalau yang alcoholic tu depa panggil hard cider.

Balsamic vinegar from white grape juice and fermented. Kalau ada recipe guna wine, boleh guna this untuk substitute.

White vinger is acetic acid lazimnya di buat dari bijirin (jagung ke beras ke).

Malt vinegar dari barley.

Sebab kita orang Islam, elok baca label bila beli cuka-cuka ni sebab ada yang memang ada alcohol content dan ada yang non-alcoholic ... coz some of these vinegars are made from wine.   Ferementation makes wine and even extended/further fermentation of the wine changes it into acid. Sometimes kan kita tengok/baca cerita pasal winery disaster ke apa habis wine semua dah 'hilang' value sebab jadi vinegar dah.

A (american) chef once told me that commercial cream of tartar is made by reducing grape juice which will result in the crystalization of the tartrates. Cream of tartar is an acid (tartaric acid). (p.s. asam jawa pun banyak tartaric acid ni)

The basis of baking powder is baking soda + cream of tartar.  

Oopsss .... I digress.

hmmm..me teringat kes Chef Wan bebaru nie..
tapi in that case..dia guna Shaoshin Wine sejenis arak dari China..
sori ekk..korang citer cuka..aku citer arak plakk..

Actually you're still on bab cuka.   

Shaoxing wine yg diguna untuk masakan is actually Shoaxing Rice Wine Vinegar. It comes from  Shaoxing, hence the name. It's made from pulut ataupun bijirin lain. And yes, it does contain low levels of alcohol ... not just pure cuka.
